Welcome to the second installment of our Cocktail Creations series! This week we we have the ever popular mojito! Havana, Cuba, is the birthplace of the mojito, however the name mojito has African roots. Mojitos are a well favoured cocktail and you can find one on the menu in many places around the world.

  • Juice of one lime
  • 1 tsp granulated sugar
  • Small handful of mint leaves, plus extra sprig to serve
  • 60mls Barcadi Rum
  • Soda water (to taste)
  • Ice


  • Muddle the lime juice, sugar and mint leaves in a small jug (Tip: if you don't have a muddler, you can use a rolling pin to muddle)
  • Pour into a tall glass
  • Add handful of ice
  • Pour of the Barcadi rum, stirring with a long handle spoon
  • Top up with soda water
  • Garnish with mint and serve
